'’I have a fish farm, when the eggs hatch and become fry I place them in small basins. And when it grows bigger to be 50 Grams, I transfer it to other lakes. When the fish becomes bigger, I sell them in auction.’’

Grilled fish cooked around large open fires is a popular dish in Baghdad.
STORYLINE:
Fish restaurants cooking mazgouf fish on open fires are becoming popular in Baghdad.
This traditional way of grilling fish dates back centuries.
A number of fishes are taken alive out of water, killed, gutted and transfixed on wooden pegs in a circular around a tamarisk wood fire.
They are finally spiced and served with pickles and vegetables.
One chef Ya’rib Aziz says that grilled fish is a growing trend here.

Customer Asawer al-Rubai says she and her family like to eat Mazgouf fish.
‘We like to eat Mazgouf fish as its taste differs from being grilled at home. We, as Iraqis, like Mazgouf. Grilled on coal. it is delicious and tasty.’’
At Dora in south Baghdad, there is a big wholesale market for fish, where fishmongers and customers gather early morning to buy cheap fish.
Ahmed Jassim run as fish farm to meet the demand.
